Le r\u00e8glement europ\u00e9en (CE) n\u00b0 852 \/ 2004 est ainsi devenu la base l\u00e9gale des prescriptions en mati\u00e8re d&#8217;hygi\u00e8ne. Le &#8220;paquet hygi\u00e8ne&#8221; assure ainsi une application homog\u00e8ne des principes qu\u2019elle prescrit au niveau de tous les \u00c9tats membres de l\u2019Union europ\u00e9enne.<\/p>\n<h2 id=\"sommaire2\">Le contr\u00f4le, c&#8217;est bien &#8211; l&#8217;auto-contr\u00f4le, c&#8217;est mieux<\/h2>\n<p>Premier changement important dans la l\u00e9gislation alimentaire de l&#8217;UE : aujourd&#8217;hui, les restaurateurs sont tenus de proc\u00e9der \u00e0 des auto-contr\u00f4les en mati\u00e8re d&#8217;hygi\u00e8ne. Il vous incombe donc de surveiller vous-m\u00eame les r\u00e8gles d&#8217;hygi\u00e8ne de votre soci\u00e9t\u00e9.<\/p>\n<p>Depuis 2012 en effet, tous les \u00e9tablissements de restauration commerciale (restauration traditionnelle, rapide, caf\u00e9t\u00e9rias et libre-service) sont soumis \u00e0 une obligation de formation en mati\u00e8re d&#8217;hygi\u00e8ne alimentaire. Avec ce syst\u00e8me, les restaurateurs proc\u00e8dent d&#8217;abord \u00e0 une analyse des dangers et d\u00e9finissent ensuite les points critiques de contr\u00f4le de l&#8217;hygi\u00e8ne alimentaire.<\/p>\n<p>Les d\u00e9tails du concept HACCP sont assez complexes. Pourtant, l&#8217;hygi\u00e8ne du personnel fait toujours partie des plus gros probl\u00e8mes lors des contr\u00f4les d&#8217;hygi\u00e8ne. Des cheveux gras ou des ongles malpropres sont pour le chef d&#8217;\u00e9tablissement un signal d&#8217;alarme absolu ! En effet, sur un cuir chevelu non lav\u00e9 et sous des ongles vernis, les micro-organismes peuvent se multiplier sans frein. C&#8217;est l\u00e0 que les mesures d&#8217;hygi\u00e8ne sont indispensables, sinon l&#8217;hygi\u00e8ne de votre entreprise sera fortement compromise sur le long terme.<\/p>\n<p>Le principe de base pour tous les collaborateurs en cuisine est le suivant : les v\u00eatements de ville sont absolument interdits sur le lieu de travail ! Mettez un vestiaire \u00e0 disposition de vos collaborateurs. Vous serez ainsi certain que les v\u00eatements de ville seront stock\u00e9s \u00e0 l&#8217;\u00e9cart de l&#8217;activit\u00e9 de la cuisine. Le simple fait d&#8217;enfiler un tablier n&#8217;est pas suffisant pour les employ\u00e9s de cuisine. Par ailleurs, pour des raisons d&#8217;hygi\u00e8ne, les v\u00eatements de travail doivent \u00eatre lav\u00e9s tous les jours.<\/p>\n<p>Enfin, mettez \u00e0 disposition suffisamment de lavabos avec des distributeurs de savon et des essuie-mains jetables. Le nettoyage des mains doit absolument \u00eatre s\u00e9par\u00e9 du nettoyage des aliments. Des mites alimentaires, des souris ou bien des rats ! La liste des h\u00f4tes ind\u00e9sirables dans les cuisines des restaurants est longue.<\/p>\n<p><a href=\"https:\/\/www.orderbird.fr\/blog\/petit-guide-des-metiers-de-la-restauration\/\" target=\"_blank\" rel=\"noopener\">Les restaurateurs<\/a> doivent donc prendre des mesures qui leur permettent d&#8217;\u00e9viter, de d\u00e9tecter \u00e0 temps et de combattre les infestations de nuisibles. L&#8217;une des mesures d&#8217;hygi\u00e8ne les plus faciles \u00e0 mettre en \u0153uvre est l&#8217;installation de moustiquaires sur toutes les fen\u00eatres de la cuisine. En outre, les pi\u00e8ges \u00e0 mouches avec lumi\u00e8re UVA, les pi\u00e8ges olfactifs contre les mites ou encore des bo\u00eetes d&#8217;app\u00e2t sont conseill\u00e9s.<\/p>\n<p>Attention : de nombreux restaurateurs commettent l&#8217;erreur d&#8217;installer des app\u00e2ts mais sans les contr\u00f4ler r\u00e9guli\u00e8rement. Or, les bo\u00eetes \u00e0 app\u00e2ts ont elles aussi une date de p\u00e9remption ! Des contr\u00f4les r\u00e9guliers sont donc indispensables pour tenir les h\u00f4tes ind\u00e9sirables \u00e0 l&#8217;\u00e9cart de votre \u00e9tablissement de restauration.<\/p>\n<h2 id=\"sommaire6\">Hygi\u00e8ne en cuisine<\/h2>\n<p>R\u00e8gles d&#8217;hygi\u00e8ne ou pas : chaque restaurateur devrait r\u00e9guli\u00e8rement faire le tour de sa cuisine et se demander si elle est hygi\u00e9nique, propre et bien entretenue. Les surfaces de la cuisine et le sol ne doivent d&#8217;ailleurs jamais \u00eatre encombr\u00e9es d&#8217;objets inutiles.<\/p>\n<p>Une attention particuli\u00e8re doit \u00eatre port\u00e9e aux aliments critiques tels que la viande crue, la volaille ou les \u0153ufs. Ceux-ci doivent \u00eatre trait\u00e9s et conserv\u00e9s s\u00e9par\u00e9ment des autres aliments. Selon les r\u00e8gles d&#8217;hygi\u00e8ne industrielle, vous devez \u00e9galement s\u00e9parer la pr\u00e9paration et le nettoyage de la transformation des aliments. Si cette s\u00e9paration n&#8217;est pas possible dans l&#8217;espace, un nettoyage interm\u00e9diaire avec une d\u00e9sinfection suffisante doit avoir lieu avant que les aliments ne soient transform\u00e9s.<\/p>\n<p>L&#8217;ordonnance sur l&#8217;hygi\u00e8ne des denr\u00e9es alimentaires prescrit les \u00e9quipements de cuisine suivant :<\/p>\n<ul>\n<li>Un lave-vaisselle avec en cycle de rin\u00e7age final \u00e0 80 degr\u00e9s<\/li>\n<li>Des bo\u00eetes isothermes pour le transport des aliments r\u00e9frig\u00e9r\u00e9s et surgel\u00e9s<\/li>\n<li>Des entrep\u00f4ts frigorifiques \u00e9quip\u00e9s de thermom\u00e8tres afin de pouvoir v\u00e9rifier r\u00e9guli\u00e8rement les temp\u00e9ratures<\/li>\n<li>Un syst\u00e8me d&#8217;a\u00e9ration des locaux de cuisine<\/li>\n<li>Les produits de nettoyage et de d\u00e9sinfection doivent \u00eatre conserv\u00e9s dans des armoires ferm\u00e9s \u00e0 cl\u00e9<\/li>\n<li>Un linge de cuisine frais et propre tous les jours (clair et r\u00e9sistant \u00e0 l&#8217;\u00e9bullition)<\/li>\n<\/ul>\n<p>Veuillez \u00e9galement tenir compte des points suivants concernant l&#8217;hygi\u00e8ne de la cuisine :<\/p>\n<ul>\n<li>D\u00e9sinfecter les surfaces de travail, en particulier apr\u00e8s le traitement de la viande, de la volaille, des \u0153ufs et du poisson<\/li>\n<li>Vider quotidiennement les poubelles, les d\u00e9sinfecter et, si possible, les collecter et les stocker en dehors de la cuisine<\/li>\n<li>Surveiller la temp\u00e9rature de la chambre froide<\/li>\n<li>Chauffer les aliments \u00e0 au moins 72 \u00b0C pendant deux minutes pour tuer les micro-organismes<\/li>\n<li>Maintenir les aliments \u00e0 plus de 65 \u00b0C pendant moins de 3 minutes<\/li>\n<li>Installer des moustiquaires sur toutes les fen\u00eatres qui peuvent s&#8217;ouvrir sur l&#8217;ext\u00e9rieur<\/li>\n<li>Couvrir si possible les aliments<\/li>\n<li>R\u00e9frig\u00e9rer temporairement les ingr\u00e9dients cuits avant de poursuivre la transformation<\/li>\n<li>Nettoyer et d\u00e9sinfecter les appareils quotidiennement<\/li>\n<li>Pas de plantes, pas d&#8217;animaux domestiques et pas de personnes non autoris\u00e9es dans la cuisine<\/li>\n<li>Contr\u00f4ler en permanence la temp\u00e9rature (maximum 175\u00b0C), l&#8217;odeur et l&#8217;aspect de la graisse de friture<\/li>\n<li>Toujours laisser d\u00e9congeler compl\u00e8tement la viande et la volaille<\/li>\n<li>Jeter le liquide de d\u00e9cong\u00e9lation et prot\u00e9ger les autres aliments de son contact<\/li>\n<\/ul>\n<div id=\"attachment_3610\" style=\"width: 1290px\" class=\"wp-caption alignnone\"><a class=\"cb-lightbox\" href=\"https:\/\/www.orderbird.com\/blog\/wp-content\/uploads\/2016\/10\/Sauberes-Waschbecken.jpg\" data-ol-has-click-handler=\"\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-3610\" class=\"wp-image-3610 size-full\" style=\"box-sizing: border-box;
