Il est responsable du bon d\u00e9roulement du service, de la bonne ex\u00e9cution des op\u00e9rations de r\u00e9servation et de la facturation. Le directeur de restaurant dirige les apprentis et se charge souvent de la r\u00e9partition du personnel.<\/p>\n<h3><b>Ma\u00eetre d&#8217;h\u00f4tel\u00a0<\/b><\/h3>\n<p>Le ma\u00eetre d&#8217;h\u00f4tel est vulgairement appel\u00e9 &#8220;ma\u00eetre\/sse de maison&#8221;. Il\/elle g\u00e8re les stocks et pratique la vente active aupr\u00e8s des clients. Il recommande des vins pour accompagner les plats, \u00e9labore la carte des boissons, est responsable de la formation des employ\u00e9s et entretient des contacts \u00e9troits avec les viticulteurs.<\/p>\n<h3><b>Chef de rang\u00a0<\/b><\/h3>\n<p>Il\/elle est \u00e9galement appel\u00e9 superviseur du restaurant et est subordonn\u00e9 au directeur du restaurant. Le chef de rang est responsable des postes de service pouvant accueillir jusqu&#8217;\u00e0 25 clients. Il les accueille et les place, fait des recommandations en plats et boissons, et prend les commandes. Il\/elle est en outre responsable du filetage, du tranchage et du flambage des plats, activit\u00e9 couramment r\u00e9alis\u00e9e \u00e0 la table des clients.<\/p>\n<h3><b>Commis de rang<\/b><\/h3>\n<p>Le commis de rang est un serveur qui d\u00e9bute comme employ\u00e9 de restaurant. Il travaille sous les ordres du chef de rang. Il est responsable de la mise en place, effectue tous les travaux de service, dresse la table et est responsable du linge de table et des r\u00e9serves de couverts. De plus, le commis de rang transmet les commandes \u00e0 la cuisine et assiste le chef de rang dans ses t\u00e2ches.<\/p>\n<h3><b>Extra<\/b><\/h3>\n<p>Sous cette appellation on parle g\u00e9n\u00e9ralement des auxiliaires. Ils aident \u00e0 servir les plats, d\u00e9barrassent les tables et les nettoient. Il\/elle surveille les postes pour assurer le bon d\u00e9roulement des op\u00e9rations. Il transmet les ordres du chef de cuisine, est responsable du respect de la propret\u00e9 et de l&#8217;hygi\u00e8ne, joue le r\u00f4le de m\u00e9diateur dans les situations critiques et est souvent affect\u00e9 \u00e0 un poste sp\u00e9cifique comme le poste de saucier par exemple.<\/p>\n<h3><b>Chef de partie<\/b><\/h3>\n<p>Il\/elle est un cuisinier sp\u00e9cialis\u00e9 dans un type de t\u00e2che de cuisine. Il est un expert dans son domaine et est gage d&#8217;excellence du restaurant.
