Le prix d\u2019achat des mati\u00e8res premi\u00e8res, la demande des consommateurs ainsi que vos avantages concurrentiels sont \u00e9galement des indicateurs pour le calcul des prix.<\/p>\n<h3><span style=\"color: #00a3e0;\">M\u00e9thode des coefficients multiplicateurs<\/span><\/h3>\n<p>Dans la restauration on utilise des pourcentages car il est difficile d\u2019\u00e9valuer les chiffres exactes, ils permettent aussi de fixer une moyenne qui prend en compte les variations des co\u00fbts en question.<\/p>\n<p>Pour la fixation le prix final d\u2019un plat sur le menu, on consid\u00e8re cinq \u00e9l\u00e9ments que nous d\u00e9taillons plus bas :<\/p>\n<ul>\n<li>Co\u00fbt des mati\u00e8res premi\u00e8res<\/li>\n<li>Co\u00fbts fixes<\/li>\n<li>Charges de personnel<\/li>\n<li>TVA<\/li>\n<li>B\u00e9n\u00e9fices<\/li>\n<\/ul>\n<p>Vous pouvez donc calculer le prix de vente d\u2019un plat en trois \u00e9tapes :<\/p>\n<p>Co\u00fbts des mati\u00e8res premi\u00e8res + 20-25 % de co\u00fbts fixes + 20-40% de marge brute =<strong> prix de base<\/strong><\/p>\n<p>Prix de base + 35-45 % de charges de personnel = <strong>prix de vente net<\/strong><\/p>\n<p>Prix de vente net + 5% ou 10% de TVA = <strong>Prix total brut<\/strong><\/p>\n<h3><span style=\"color: #00a3e0;\">Autre m\u00e9thode<\/span><\/h3>\n<p>Vous avez acc\u00e8s aux chiffres en question dans votre syst\u00e8me de caisse, il suffit des les int\u00e9grer \u00e0 la formule.<\/p>\n<p><strong>Prix de vente<\/strong> = votre consommation de biens (achats) \/ vos ventes nettes (ventes) x 100<\/p>\n<p>Si le prix de vente de certains plats ne couvre pas les co\u00fbts n\u00e9cessaires pour le r\u00e9aliser vous pouvez toujours compenser cette perte avec d\u2019autres produits qui ont des marges beaucoup plus \u00e9lev\u00e9es. M\u00eame si vous avez obtenu de bon prix aupr\u00e8s de vos fournisseurs, n\u2019h\u00e9sitez pas \u00e0 les ren\u00e9gocier r\u00e9guli\u00e8rement. L&#8217;objectif est une qualit\u00e9 la plus \u00e9lev\u00e9e pour des co\u00fbts aussi bas que possible bien s\u00fbr. Pour que le calcul des co\u00fbts soit fiable, la recette doit toujours \u00eatre la m\u00eame et la taille des portions (grammage) doit \u00eatre similaire.<\/p>\n<h3><span style=\"color: #00a3e0;\">Les co\u00fbts fixes<\/span><\/h3>\n<p>Le deuxi\u00e8me facteur dans le calcul du prix est les co\u00fbts fixes. C\u2019est-\u00e0-dire les co\u00fbts tels que le loyer, l&#8217;\u00e9lectricit\u00e9, le gaz, l&#8217;eau, internet et le t\u00e9l\u00e9phone, vos assurances, le traitement des d\u00e9chets ainsi que votre syst\u00e8me de caisse.<\/p>\n<h3><span style=\"color: #00a3e0;\">Les charges de personnel<\/span><\/h3>\n<p>Les salaires de vos employ\u00e9s ainsi que les charges sociales ou les cong\u00e9s pay\u00e9s ne doivent surtout pas \u00eatre sous-estim\u00e9s, c\u2019est votre plus grosse source de d\u00e9pense. La fr\u00e9quentation de votre \u00e9tablissement varie, vous avez besoin de plus ou moins de personnel mais vos prix eux, ne changent pas. Ils doivent donc couvrir vos co\u00fbts de personnel ainsi que d\u2019\u00e9ventuels co\u00fbts suppl\u00e9mentaires.<\/p>\n<h3><span style=\"color: #00a3e0;\">La TVA<\/span><\/h3>\n<p>Depuis le rel\u00e8vement du taux de TVA dans le secteur de la restauration en janvier 2014, le montant s\u2019\u00e9l\u00e8ve \u00e0 5,5% ou 10% selon l\u2019emballage et le mode de consommation des produits. La TVA doit \u00eatre inclues dans les prix de vente sur votre carte.<br \/>\nLes produits vendus pour une consommation imm\u00e9diate ont un taux de 10%. C\u2019est le cas pour une consommation sur place dans un restaurant. On appliquera donc une TVA \u00e0 10% sur une glace en cornet sur place ou \u00e0 emporter car elle est \u00e0 consommer imm\u00e9diatement.<br \/>\nLes produits conditionn\u00e9s consommables ult\u00e9rieurement ont un taux de 5,5% comme une glace en b\u00e2tonnet vendue dans un emballage en plastique. Les traiteurs se voient attribuer un taux de 10%.<br \/>\nPour les boissons, le taux applicable est de 5,5% sur les boissons non alcoolis\u00e9es si les contenants permettent la conservation, une bouteille ou canette de coca par exemple. Elle s\u2019\u00e9l\u00e8ve \u00e0 10% lorsque la consommation est imm\u00e9diate, c\u2019est \u00e0 dire un coca servi avec un verre \u00e0 table au restaurant. Pour les boissons alcoolis\u00e9es \u00e0 emporter, livr\u00e9es ou consomm\u00e9es sur place, le taux est toujours de 20%.<\/p>\n<p><a href=\"https:\/\/www.orderbird.com\/fr\/caisse-ipad\" target=\"_blank\" rel=\"noopener\">Une caisse digitale<\/a> vous permet d&#8217;enregistrer les taux de TVA de tous les produits de votre carte.
